In theory, it should be simple to store two rockets in the same tube. You could port the tube and make the rockets robust enough that the exhaust washing over them won't damage anything, or separate them with a small charge that will propel the rocket out of the tube before the motor ignites. The second option turns the weapon into a Metal Storm device, where the bullets are guided missiles.

Either way you choose to do it, it reminds me of a certain line in The Hunt for Red October:

"Could you launch an ICBM horizontally?"
"Sure. Why would you want to?"
