I think Halsey is too smart to simply defect. If she was simply trying to get back at ONI for trying to kill her, it's a certainty that Fleet, Prowlers, and Spartans would expedite denial of the Covenant remnant's ability to make war. Probably just to spite her.
Although, it makes me wonder if any of her capture was planned. Does she see a quick end to the war having 'Mdama in possession of humanity's black gem of a scientist and the Janus Key by diverting resources from counter-insurgency operations against the colonies and providing support to anti-government Sangheili?

Telling the Spartan candidates that their parents know where they are and approve of it - that they aren't coming to rescue their babies - relieved me of any compassion I once held for this woman. Bitch needs to pay.

The UNSC has been an antagonist from the start. One does not simply end a rebellion against tyrannical rule with nuclear bombing, allow a service of the Navy to act outside of military authority, or kidnap children without appearing to be so fucked up.
Infinity probably has as much reverence in the post-war galaxy as any Forerunner artifact. Nobody will attempt to destroy her unless every effort to seize her has been exhausted. She's far too valuable to too many people.
