As to the "retcon", there's another way of looking at it—the content is UNSC propaganda. I doubt they could have had cameras on the Chief inside the carrier aside from his own helmet feed, but they definitely wouldn't likely have all those cameras shooting perfect angles of him in the middle of a war zone.
