There is the Covenant against the Flood battle on Two Betrayals, after coming out onto the snow field and there are several Flood carrying Rocket launchers. This is an intense battle that is fun to watch because you really never know which group of enemies will win this battle. I usually just hang back in a safe spot and just enjoy the AI battle and I mop up the stragglers. I agree with the rest of the AI battles you mentioned.
