I think it's a pretty poor reflection on the quality of games available/announced to be honest, combined with - as you say - the nostalgia for H2 multiplayer.

: All said and done though - I do hope this is the last game to be re-mastered.

I have to agree. And with Halo 3 now available to play on Xbox One, I imagine they won't bother with a H3A. It wasn't such a big milestone in gaming as the first two.
