The immediate origin of the Ghôl is almost certainly the Ghoul of Arab mythology, reinterpreted by H.P. Lovecraft (a significant inspiration for the Marathon universe) and Clark Ashton Smith as a primitive doglike humanoid who lives on the corpses of sentients and worships a god of death.

But the above link could certainly have motivated the Celtic aspect of their culture.
