How exactly do they tell which piece of pre-release tat was the bit that most interested the payers? How much time would they have to take that feedback onboard and do something effective with it?

Those were rhetorical questions, they wouldn't be sure and they wouldn't have time.

Also, 343i never gets the message even when you tell them what you want. Or maybe it's the converse and they are determined to give you what you don't want. Is it too late to try reverse psychology?

Preorders mean they already have your money. If they weren't inclined to put in money before they got your money then I doubt that having your money would spur them on into investing more effort. I think it would be quite the reverse.
