What you're seeing in his videos doesn't seem very typical- honestly I only have a faint idea of what he's doing, it's almost like magic to me. First off, and this is super important, he just has great control. This is years of practice at work.

I think he might have the Tablet Pressure-Opacity controls off (if you're using CS5+), and the spacing of the brush is likely set to 1%.
