color maps & invisable monsters

First, I have a problem with loathing and that is I DON'T KNOW HOW TO MAKE THE COLORMAPS! What programs can I use to create them? I know that you can use Adobe Photodeluxe, but I can only open existing ones, but not edit them or make new ones.
Another problem. When using Loathing, I saw a creature available to put on maps called a griffin. I tried to place one, but I couldn't see or select it.
