The selection border and vitality and mana indicators depend on the object tag, not the monster tag. Go into the "objects" index and mess with the deer object.
The problem with the attack is probably the flaming skull itself; maybe you've forgotten to give it an object tag (that's given me more trouble with projectiles than anything else.) Try modifying an archer or a dwarf to fire it and see if the game still crashes. If it doesn't, then the problem is probably with the deer's attack. Have you set a sprite sequence for it to use?

In what sense fully functioning? If you just want a tree that floats around and doesn't attack or anything, you can just dupe an existing giant unit and change the collection it draws from to one of the scenery collections, then change all the sequences to one of the "tree" sequences. Remember to delete the unit's attacks or the game might crash. Hope this helps.
