Mauls, Myrmidons, Myrkridia, Mahir and Soulless are most likely often female (or formerly so) without us noticing (unless someone's checked the size of the Myrmidons' pelvic girdle). And there's Shiver, of course.
Why no human women? Well, basically, two reasons. One, men are more likely to be in most human fighting forces--and it's not a good idea to have both male and female versions of each shown in-game, because then you're adding to Myth's memory load and slowing loading times without a gameplay payoff. Two, Bungie has stated that they wanted to avoid parents and censorship groups worrying about teenage boys massacring beautiful women (hence Shiver's appearance :-). There were originally female Zerks, but they were removed.
According to GURPS most human fighting forces do have female members--there are women Warriors, Archers, and so on. Women aren't particularly encouraged to join, but they aren't discouraged either.
