I believe it all stems from the Egyptian influences on Cath Bruig design. The Herons were likely called so because in Egyptian mythology the heron represented the phoenix, and Heron Guards are "reborn". (Hence the "Phoenix Rising" tournament in which they are selected) The Ibis Crown is an obvious derivation thereof - Ibis was the Egyptian god with the head of a heron, who weighed the souls of the dead against a feather at their death to judge if they were pure enough to ascend into the Egyptians' version of heaven. Cranes (which is a term from GURPS btw, I just used lots of GURPS into in UMS) are another obvious derivation, as cranes and herons are very similar species.

Cormorants, OTOH, are squat little birds who have trouble walking on land. I doubt they have anything to do with the Bruig.
