Well, GURPS says that "1 in every 100 Myrkridia born becomes a Large Myrkridia. These rule their pack when present." From this I'd guess that it's predestined from birth, and apparently pretty random. Some are just born to be giants, whether from genetics or from other influences.
And all Large Myrkridia are naturally mages. Could be that the magery is their fundamental characteristic--some Krids are born to be mages, and they unconsciously use that power to fuel their growth into giants.
Myrks eat people, as well as any other sentient beings they encounter (except Trow--probably). Convenient during wartime, since they don't need much in the way of supplies. :-)
