Its how the summoner creates them. He picks up a few giant skulls and a bunch of regular skulls
It is possible that Myrks change to Myrk Giants like a caterpillar to a butterfly, by going into a coccon and growing while in it
or perhaps they go Poof! in a cloud of black smoke and come out Myrk Giants
OR
Bungie was tired of making Myrkridia so didn't bother to make the sizes in between.
