IMHO Myrmidons arre not actually undead, but rather the victims of a bizarre curse. The reason that they aren't undead is a simple... THEY AREN'T DEAD. No matter what way you argue it undead means ressurected, reanimated or reincarnated from the dead.
When Balor gave the Myrmidons immortality he didn't do it in the strictest sense of the word. The Myrms seem only able die through unnatural means (i.e. getting killed). They can't be killed by age, disease or anything else short of force. They are driven mad mainly because they either are wasting away from some side effect of the curse or they just can't stand living forever. Either way, they're pissed and not that rational ;)
