The warrior, I'd guess, is Mauriac.

We know he's not a fir'Bolg because the journal's in Bruig (otherwise the Myth II narrator would not have been able to read it, or at least would have commented on the fact that it's in fir'Bolg), and it's unlikely that the uncivilized fir'Bolg are fluent enough in Bruig (a foreign language) to write their personal diaries in it. The Myth II narrator would also have called him a "fir'Bolg who..." rather than a "man who...", since this would be worthy of note and more accurate.

Also, the narrator is clearly more familiar with human soldiers like Mauriac than with the fir'Bolg archers; for instance, he loses track of the Watcher's arm until the Archer Captain has finished making arrows out of it. Were he an archer himself, he would doubtless have been aware of the location of the arm long before, as soon as it was in fir'Bolg possession. And he would have known more about what the arrows were for, and would have known for sure that they were made from the Watcher's arm--he didn't actually have his suspicions confirmed until the Watcher was attacked. Furthermore, he refers to "the archers" in 3rd person when Alric traps and petrifies the Watcher, rather than "some of us" or something like that.

Finally, *if* the narrator's the same person who speaks in the introduction in the manual, then he must be human; we know that from the details of that person's childhood life.
