I just assumed that Balor would have had a few hairstyle changes over his reign-it was a fair period of time. Artistic licence may have played a large part as well-the people responsible for the cutscenes would not have made the endgame pics.
The blood was a dramatic effect (I assume) to show the amount of power in this guy. He can never truly die so blood must be constantly cycling through his body.
