Actually, you take a fresh corpse, make it into a ghast, and wait for it to become a Wight

: 'owner's' memories and abilities.

: Undead. You remove the soul of the individual, and
: obviously this is done while they are still alive.
This seems right. the Fallen do this to prisoners.

Probably a wight with hydrogen added to the veins and open spaces in the corpse/wight/ghast

Take an older corpse that is later in the decaying process

Myrmidons: Balor merely offered them immortality, but not thier youth, they eventually grow ancient and waste away.
