But from what we know of dwarves they love to fight. I can't see them just sealing their fate like that to keep some sort of honor. They would've fought to the last dorf and THEN maybe destroy the gates to prevent the city from being taken.
Hm but that could also apply to my theory.
Unless they had another way out of the city...
