Humans, natch. Big piles of cool units--Zerks, Herons, Locks, The Deceiver--are all human. Plus without human there wouldn't be any undead! Or there would be, but they'd be undead squirrels, which wouldn't be nearly as scary.

I like the "sorta-Dark-but-not-truly-evil" races too; Mauls and Ghols and mebbe Fetch.
