We know of two that for sure have been beheaded.

We found that there was no majority census; practices involved cutting people into bits and putting them in jars around town, to tearing people into four quarters with whipped horses. It CAN involve beheading, but not neccesarily.

The Dark Gods were mentioned in the game; the Ghols worship them. And the Dark Gods also shattered the One Dream, the source of Wyrd's power. So he can't really do anything about it. Truan, on the other hand, can just walk up and dig the head out of its little hole.
