Who's to say those grunts and snarls aren't their speech? Dolphins communicate in clicks and whistles, and whales communicate with long wails and whines.
That aside, yes, the Ghols do have language. In "Tales From Myth The Fallen Lords", the famed Myth comic, there is the story of Fang-Grinder, the "King of the Ghols", whose death made Mauriac a hero. There are several speech-bubbles in the comic with Fang-Grinder saying various things, all followed by an asterisk (meaning footnote, of course). When you go look at the footnote, it says "In the bestial language of the Ghols". So you're right, they do speak, though in a "bestial" language.
