Balor, the Watcher, the Deceiver, Soulblighter, and Shiver/VoicelessOne had all been killed by that point. The ones known to have been killed several times are the Watcher, the Deceiver, and Shiver/Voicelessone (which they count as two), so I would say it's those. Soulblighter has only died once.

They are counting seven as Balor, the Watcher, the Deceiver, Soulblighter, Shiver, The Voiceless One, and the Lurker. But they are saying that, if Shiver & The Voiceless One are the same, then there's one more left. (which is the Faceless Man).
