Undead possess a drastically different physiology than living beings. When the root boosts cellular regeneration, the body attempts to reorganize its physiology back to what it had when it was alive. However, it loses a viable undead physiological pattern before it can gain a viable living pattern, and so it simply falls apart. Kind of like trying to replace the engine in a car while you're driving it.
