The Watcher may have magically toughened up his body so that no weapons could harm it. But his own bones, which were also magically hardened, could be given a point sharp enough to penetrate his flesh. And, like the Trow, he turns to stone when he's badly hurt (I guess it's a survival mechanism or something.)
