Their immortal, not invincible. The ritual probably not only makes them immortal, though, it prbly also heals them at the same time, so when they're already immortal, they can still use the ritual to heal themselves. The ritual appears to be one that gives life to the object of the ritual, and the "worthier" they are, the more life is given to them, up to the point where it gives them eternal life (provided they don't get fatally sick or chopped in half afterwards).
