I always figured that the Leveler tended to chose beings with great magical power, or at least the potential for it, therefore it would probably not chose a Dwarf, especially not by the time of the Wolf Age, because they were starting to go away from the magical arts. The Fir'Bolg live a simpler existence, and so may have simpler magic, and be harder to corrupt.
As for the Trow... well, I've always looked upon them as referees or land lords. They keep the balance.
Actually the Trow themselves did a good job of leveling the myth world insofar as diversification of species. Maybe Wyrd saw them starting to decline and decided he needed a new house keeper?
I'll leave the other questions to someone else. The deities were never my area of expertise or interest anyway.
