: seems logical that it was to block a small entrance,

Suggestion:
1) We know how much the Dwarves hate the Ghols.
2) We know that the defenders of Stoneheim were probably hopelessly outnumbered.
3) We know that Ghols don't build fortifications, although they may occasionally take over other people's.
By destroying Stoneheim, the Dwarves kill the survivors of the garrison, probably kill the first wave of Ghol attackers, and ensure that their hated enemies can't occupy and use the stronghold of their ancestors. I would imagine that, though the mountains in and around Stoneheim are absolutely swarming with Ghols, the fortifications of the city are nowhere near as intact as those we saw at Myrgard.
Oh, and btw, there's a bit of flavour text that says something to the effect of the Ghols celebrating Stoneheim's capture with feasts at every full moon. Which rather suggests that they did capture it.
