Caves are not made of rock. Mushrooms grow naturally in caves, underground rivers exist in caves, granted loving for 60 years on mushrooms and water doesn't sound great but if there was a world Knot in there they would have been able to bring food in.
Lets put it basically a barbican is a tower, it is unlikely to be able to crush an underground city. It will only be able to block the entrance, it may be likely that the dwarves designed the barbican so they could blow it in the event of a near capture of the city. Taking into account that Dwarves seem pretty happy to live in caves, they'd be fairly comfortable down there, and thus it is obvious that they would with little difficulty survive, and thus clearly proves, they are.
