I always took the flavor to be describing them as presently "minions of the dark", and that the "once-human" bit is essentially an adjective (essentially saying that they were once normal humans [not that they were minions of the Dark while alive] and that only after their souls are stolen do they start serving the Dark). And I'm right, too, because of that dash. Unless they made a grammatical mistake, because the insertion of a dash makes the phrase an adjective. (man-eating chicken vs. man eating chicken; three year-old children vs. three-year-old children vs. three year old children) You get the picture.
