Pretty much one of everything you have two of. A lung, a half of liver, etc. Also, one can live without most of your stomach, so long as food intake is carefully observed and the esophagus and pylorus are properly connected to the remnants of the stomach.
What else can we remove? How about the reproductive organs, you don't need them to live. A kidney. All the sensory organs. His extremeties. I think all the skin, too, if we put him into a completely sterile room.
Also, I've read of people who have whole halves of their brains removed due to disease etc. The other half takes on the missing half's functions. So we could do that too. In addition, people live after lobotomies. I wonder if both procedures could be done on one's brain and still have the person survive?
