Well, I think his head stayed inside the helmet simply for appearance in-game. Remember, the polished white, horned galea is instantly recognizable as Balor. If they made sprites for a naked head, it wouldn't have the same dramatic effect. It'd just be some guy's head, and not very memorable, imo.
But as for how the head stayed in there when considering the Myth universe and not real life explanations: it's probably anyone's guess.
Could be that his nose was pressed up against the inside front of the mask and prevented gravity from drawing it down. Or like you proposed, it could very well have been a Magick of some kind. Either way, it isn't really significant.
Personally I like to think that he bound that armor magically to himself, so even though he lost his ole noggin, the magicks still kept the ugly thing attached. To the mask.
