It's only herons that live that long. That and apparently some mages can projong their lives as well (Deciever, Watcher, etc…). This journeyman quote explains why they are 'deathless':

"Their healing ritual has its roots in the initiation rites of the Heron Guard, but what brings about immortality in a truly exceptional person merely restores the vitality of lesser men."

So since all heron are exeptional (they didn't go through those tests for nothing) they are in essence immortal. The rest of the Bruig aren't.
