Heh… sounds cool. Just stay off of Stoneheim's fall during the Great War for M3 mods. I've been aching to do that project since M2, but the maps never got made and I was too busy making other stuff.
I would volunteer to help y'az, but since I'm in SoM and we've always got a million projects going on anyway (mostly LR's fault) I probably couldn'a find the time.
Some suggestions could be the retaking of stonehiem after the war with Soulblighter, complete with dorfs, ghols of all kinds, airstrikes, etc…
The fall of Myrgard's been done (and rather well at that) by Ironduke as "The Ephor of Myrgard." When the mill comes back, check it out.
Other than that, you could just invent your own small skirmish or ghol destruction of a dwarven village (or dorf destruction of a ghol village).
