Thrall have about half the intelligence of an ant. That intelligence is put into them magically by the necromancer.
Not all undead are sentient, for certain. They don't need to be self-aware to think and move and react to their environment. They work like ants or bees do in a collective, and they're programmed with rather simple instinct, and even those creatures are more complex than Thrall or other simple undead.

Lol, that's so debatable, I'm just going to ignore it.
I'll just say, if they were alive, they wouldn't need magic keeping them animate. That's the best definition for undeath.

They don't have to know who they are or what they are to react to stimuli.

Actually, Wights move at the exact same speed as Thrall. That's why Thrall can catch up to them in those "Desert" river battles between sunken Wights and tagging Thrall.

There might be some minor aging process that can be implimented upon the corpses to make them into Thrall instead of Ghasts, or just a more complicated spell. Ghasts need a long time to decay into Wights. The process can be sped up, however, in those cages we saw for Wights in Sons of Myrgard.

They move in groups, though, in patrols with Soulless and fetch.

Right, the lack of magic suspending its animation is what will kill an undead creature…definition of undeath.

What? That's a nice opinion, but where's…even the inspiration for this idea?
It's not based on anything and has no evidence supporting it.

That's…a thought. It has no evidence at all, however. "Unlife" is used twice in the game, but not more. Neither time is its definition even certain.
