You could say the same of Thrall. They stand around and rot, but we never see them actually "die" from it...in fact, we know that their decomposition can be partially reversed, at least in the creation process.

Myrmidons have a decomposed appearance--even extremely old living people don't lose all the water in their bodies and have their jaws fall off. They can survive enormous amounts of physical trauma (e.g. having ribs torn out of their bodies) without complaint. They're marked as "undead" in the TFL tags. They're killed by healing. They're described as no longer "flesh and blood." Unless you take the undead to be mindless by definition--which is why I suggested "unliving" as an additional category--there's really no reason not to classify them as sentient undead, produced via an unusual method.
