What makes you say he was immortal in Myth 1 or that he was an ordinary guy in Myth 3? According to that inside info some Bungie employee gave, he became immortal between the first two games when he cut out his heart. Even before that, he was obviously quite old and difficult to kill. He could have already had his defense enhancement spells placed on him By the timeframe of Myth 3.
