GURPS tells us that they do have fleets of ships - trading ships, that sail up and down the shore for easy transport of goods. Since there are no known inhabitants on other continents, or even any other really KNOWN continents at all, they tend not to sail much at all. Exceptions being the Berserks, and the former Yer-Ks.

They don't really need to, either. See above about there being no real need to cross oceans, and combine that with the undead's lack of breath, and you run out of a need for Dark ships very quickly. An advantage to this could be that folks could set out to sea with a store of food to avoid minor undead uprisings. Of course nobody could survive at sea for a thousand years, but whatever.
