Well, I'm not saying magic automatically makes you get big; different people are altered in different ways. Shiver got mummified (and then reincarnated); Soulblighter took bits of himself off. I think the Watcher's size is just his personal physical trademark--the Big Angry Sorcerer Guy. Versus, of course, the Little Weasely Sorcerer Guy, in the person of Myrdred. It's just like Itchy & Scratchy, but with [even] more carnage.
And to my knowledge there's no reason to think that the Callieach were giants. The Elder Races came in all shapes and sizes (as we can see from the Tales comic); the Trow may have been exceptionally large. Perhaps that was the main advantage which allowed them to fend off all comers.

No, we don't know for sure, but then we don't know whether Rurik's human either. :-) And while we'll always speculate on what the Callieach look like, I think it's nice to have little or nothing to go on; they take the place of the Myrkridia as the "mysterious scary race only vaguely remembered."
