It's been a big joke for a while that early 360's came with cabling for both composite and component, but modern 360's only come with composite cables. That was a big thing during the life of the S variant, and according to Amazon's listings, even the new E SKUs only come with composite cables.

It's entirely possible that I missed it, but I wasn't aware that any 360 SKU ever came with HDMI cables at all.

I can't find as much info for PS3, but the one I picked up last August also came with just a composite cable. AFAIK, shipping with an HDMI cable in the box only really became a standard with PS4/XB1, which they likely only did on account of supporting nothing but HDMI.

Nope. The Xbox One and PS4 both support 480p video output. They aren't common, but there are 480-line displays that support HDMI.

It's true that GUI elements are going to be blurred pretty horribly, though. Especially in some games, where "these new consoles support 1080p" seems to have been interpreted as "make text as small as possible while still technically being correctly resolved by the 1080p buffer".
