I've noticed this as well and gladly exploited it to keep my units alive.

I don't know how much has been discussed about the nature of the Stygian Knights on these boards, but what I recollect from the game is that they are just suits of armor with souls that animate them bound to them. I always believed they were put there as sort of a permanent guard. What better to guard the crown than an army of nigh invincible (assuming no dwarves are around) knights who never tire, never grow hungry, etc?
