It depends on if it's Xbox 360 of Xbox One.
The Xbox 360's only 5.1 out option is dolby digital, so you need to get a decoder that then has discrete outputs. I used a Denon decoder with XLR outs, then fed those into a Saphire firewire audio device.
Xbox One is much easier, since it can output 5.1 LPCM. You just record it straight off the HDMI.
