After looking at the Nexus Mod web site and the forum posting about this mod, I found some helpful info about which single player maps are replaced with the modded maps.
Halo - Rockslide
Truth and Reconciliation - Hangar
The Silent Cartographer - Island
Assault on the Control Room - Snowfield
343 Guilty Spark - Swamp
Two Betrayals - Snowfield (Night)
I was a little confused as to which single player maps were modified, so the info above should make it easy to understand.
It's easy to make a copy of the original single player maps that get replaced with the modded single player maps. Just create a new folder, and put it somewhere safe, and call it something like "Original Halo CE maps" and just copy and paste the original maps into the folder you created. To restore the original maps just delete the modded maps in the Halo1 maps folder and paste the original maps back in the Halo1 maps folder.
