Look at the prequels. The Jedi "uniform" is desert wear because that is what Obi Wan wore on Tatooine. They hid Anakin's children on his planet of birth, with his relatives, and Ben hid in plain site nearby wearing a Jedi "uniform".

And Rogue One explains why the original Death Star was prone to exploding but that doesn't explain why the other 2 "Death Stars" were also vulnerable.
