We use those low-poly models to help test the scale before moving onto the actual detailed piece. (The low poly is easier and faster to put together to get an idea if you need to make a part bigger or smaller, compared to doing the more complicated part and wasting time if you scaled it wrong).

Never seen someone do the whole suit as low poly though. Neat!
