Along with in-universe reasons and artistic liberties by 343, I think a lot of it has to do with that we've never see a lot of these armors in the style of old MJOLNIR with military-standard olive green plating and gold visors. Spartans nowadays run around in often fancily colored and marked armor. Blue Team in Halo 5 was fortunately depicted as a little bit more conservative than SPARTAN-IV's with subdued blues, grays, and browns.
