I'd imagine the spectator mode would be a bit like how Counter-Strike: Global Offensive does it. Slightly delayed from real-time so observers cannot help people currently in the game.

Not sure about invis pickups, but for overshield at least you should be invulnerable for the brief time you're pressing the button.
