I edit movies. I know exactly how films are made. I am still able to enjoy a good film. When I start to pick one apart technically when I first watch it, as you are describing here, then that indicates that it failed in its effort to engross and engage me.
If the work does its job, it draws you in, so if you are analyzing it in this way the first time through, then it probably isn't very good.
